If you are looking for a quick, easy, delicious, and low in points soup, you’ve come to the right place. This used to be in the meal rotation quite a lot but for some reason I forgot about it. I decided for this week’s menu planning, I would go back to my old weight watcher recipes that I used to love and recalculate the smart points. I came across this beef vegetable soup recipe and knew I had to make it again.
Beef Vegetable Soup
Smart Points: 4 for 1 cup
1 pound ground beef (93% lean)
1/2 cup chopped red onion
2 (14 oz) cans fat free beef broth
1 cup water
1 (26 oz) jar pasta sauce (my absolute favorite for this recipe is Newman’s Own Sockarooni)
1 (16oz) package frozen mixed vegetables
1/4 tsp pepper
Cook beef and onion in a large pot.
Stir in remaining ingredients.
Cover and bring to a boil.
Uncover, reduce heat, and simmer 15 minutes, until thoroughly heated.
